Moose Enchiladas

The soul of delicious comfort food must have had its origin somewhere in the warm heart of an Hispanic grandmother. Somewhere in time lost, this woman developed the wonder that is the enchilada. Her wizardry has stood the test of time and palate alike. It’s simply delicious. The moose with his hearty and robust addition to this dish, is the perfect compliment. The two pair like peanut butter and jelly. I made my own enchilada sauce for this recipe but it would be equally delicious with your favorite store bought variety. It is simple, fast and scrumptious. Ingredients:

1 lb Moose Burger- (Or deer, elk, antelope, beef, chicken-whatever you have!)

1 T. Butter

Salt and Pepper

8 Flour Tortillas

2 C. Enchilada Sauce

1/2 Large Onion-Diced

1 4oz. Can Diced Green Chilies

2 t. Chopped Garlic

1 Can Black Beans

3 C. Shredded Cheese

Optional garnishes- Sour Cream, fresh cilantro, lime, or salsa.

Directions:

Heat oven to 375 degrees. Saute the onion and the moose in the butter over medium heat until the meat is cooked through and the onion is translucent. Season with salt and pepper to taste. Add the chilies, garlic and black beans and mix until combined.

Spread 1/4 cup of enchilada sauce in the bottom of a 9X13 baking dish.

Layer sauce, meat filling, cheese and more sauce into each tortilla and roll tightly.

Place into the casserole dish and top with remaining enchilada sauce and cheese.

 

Bake uncovered for 20 minutes. If you want to brown the cheese at the end, place under the broiler for a minute or two. Serve immediately with sour cream, fresh cilantro, lime and salsa if desired.

      Thank you so much! I had not tried moose until my husband was blessed enough to draw the difficult tag and then we had a year and a half of trying moose in many different ways and it is truly delicious! One of my favorite wild game meats.
