Ingredients:
Moose Tenderloin
1 lb Bacon
Cajun seasoning
4 T Apricot Jam
1 T Dijon Mustard
Preheat the oven to 400 degrees. Rub the moose tenderloin with the Cajun seasoning and wrap with bacon. Secure the bacon with toothpicks but don’t forget to remove them before serving.
In an oven safe pan, sear all sides of the tenderloin until brown (about 10 min.) then place the pan in the oven and bake for 15 minutes.
Combine the jam and Dijon mustard. Remove the roast and coat with the glaze. Return to the oven for 5 minutes or until the roast reaches an internal temperature of 130 degrees. Remove from the oven and let sit covered for 5 minutes before serving.
