Spicy Sriracha Elk Sausage Sandwiches

I like to get creative in the kitchen. Sometimes I come up with some really random dishes and sometimes I create something that is destined to become a household classic. This sandwich is just such a creation. I sent these spiced, cheesy concoctions to the guys at the local dojo and they were an instant hit. I hope you enjoy this unique way to use some bulk, wild game sausage.

Makes 3 Large Sandwiches

 

1 lb. Elk Sausage

3 Large Buns

2 Onions

Olive Oil

Salt

Butter

3 slices Pepper Jack Cheese

1 Cup Miracle Whip

1 T. Sriracha

1 T. Balsamic Vinegar

Begin by thinly slicing the onions and placing them in a large frying pan with a little olive oil and salt. Cook them over med/high heat stirring often until they are caramelized. While the onions are cooking, butter the inside of the buns and shape the sausage into 3 thin patties.

Stir the Miracle Whip, Sriracha and Balsamic Vinegar together in a bowl to create your sauce and set aside. Remove the onions from the pan and set aside. Place the buns butter side down into the hot pan until toasted.

Set them aside and add the sausage patties to the pan. Brown the patties on one side for a few minutes and then flip them over. Top with the cheese and cook until they are no longer pink inside and the cheese has melted.

Now it is time to build your sandwiches. Take a bottom bun and coat it with sauce, next add your cheesy sausage patty. Add a generous helping of the onions and top with another sauced bun. Enjoy sinking your teeth into this juicy bad boy.
