
I hate having to scroll for miles to get to the recipe I found online so I am just going to get straight to the point. Those tough and sinew filled chunks of meat that come from the lower legs of big game animals are called the shank. Chuck and shank roasts are elevated to something tender, nutritious and downright delicious with this simple and easy recipe. It is a perfect healthy meal for those weeknights that are busy and chaotic.

2 small shank or chuck roasts
2 cups water
Granulated garlic to taste
Salt to taste
Pepper to taste
Half a large cabbage
1 large onion
7 large carrots

Place the roasts in an Instant Pot and add seasoning and 2 cups of water. Set the Instant Pot to pressure cook on high for 1 hour. Release the steam and add the veggies cut into chunks. Reset the pressure cooker for 10 minutes and then serve or let it slow cook on low until dinner! There is great broth in the bottom of this dish that I like to save and use later as a gravy base or for a soup.
